Couscous: 750g
lamb: 500g
potato: 200g
small carrots: 200g
small turnips: 200g
chickpeas: 100g
Wild Celery (khorshef): one
Onions: a small one
Oil: a deciliter
tomato : two tablespoons
harissa: 1 tablespoon
red pepper : 1 / 2 tablespoons
Bharat: 1 / 2 tablespoons
salt and pepper: according to taste
First of all ; pick over the chick peas, wash them and put them to soak
several hours in fresh water then rinse them .
second , prepare a pound and a half of couscous .
Scrape the carrots and cut them into halves . Peel the turnips and cut them into quarters. Scrape the wild cardoon ( called khorshef in Tunisia ), wash and cut it into sticks .Peel and mince an onion. Wash and peel potatoes.
Then , cut the lamb into slices.
Cut a pound of lamb meat into 4 or 5 pieces and put in it some salt and pepper.
after that , Heat oil over high heat in a pot full of couscous , after few minutes put meat and minced onion together .then
Add the tomato paste, the Harissa and red peppers ,Mix and cook them for 8 to 10 minutes. after that add vegetables, and a liter and a half of water.
finally put couscous in the Kiskas. Once the couscous is cooked, remove it from the cooker as soon as meat and chick peas are cooked, correct salt according to taste and pour the mixture on couscous with some bharat.
